500g cauliflower, damaged into florets

low-calorie cooking spray

1 onion, peeled and thinly sliced

1 garlic clove, peeled and crushed

100g low-fat (below 5 per cent fats) cream cheese

50g reduced-fat mature Cheddar, grated

sea salt and freshly floor black pepper

1 slice of wholemeal bread

40g reduced-fat Cheddar, grated

1 spring onion, trimmed and thinly sliced (optionally available)

1 Preheat the oven to 200°C (fan 180°C/fuel mark 6).

2 Prepare dinner the cauliflower in a saucepan of boiling water for 8-10 minutes, till simply delicate, then drain properly. Whereas the cauliflower is cooking, spray a frying pan with low-calorie cooking spray and place over a low warmth.

Sprinkle the crumb over the cauliflower cheese and pop within the oven for 10 minutes till the highest is crispy and golden. Sprinkle with the spring onion (if utilizing) and serve.

TIP: You might add 2 bacon medallions to this recipe for an additional 23 kcal per serving. Fry till crispy in a frying pan, then slice and sprinkle on prime.
